Regarding stock: I keep a large-ish tupperware in the freezer with veggie and meat scraps in it. When it's full, I make broth. When I have a lot of broth, I make soup. It's a good cycle.
I tried "Creamy pumpkin soup" from a cookbook I have last month that was disappointing. It included equal parts pumpkin puree, tomatoe puree and soy milk and it just didn't have the flavor that I hoped it would. I still have a pie pumpkin, so I'll have to try one of yours soon :)

A lot of times I will have a recipe that will call for 1 celery stalk or 1 carrot. I'm then left with a bunch of celery and carrots in my fridge. When that happens, I will make a bunch of stock and then freeze it for use later.
