I feel like last week just flew by! I’m not sure what I did with the first 3 weeks of July, but it definitely wasn’t what I meant to accomplish for the most part. It’s been a good summer, but I need to keep the days from slipping by without notice. I feel like I’ve barely got a handle on a summer routine and this week we have company coming for several days, so hopefully those days will be full of fun.
As a result of that company, I’m not entirely sure what my cooking is going to look like over the next week, given the company and the high temperatures on the horizon. I don’t mind using the oven when it’s hot, because I’m apparently a crazy person, but I’ll try not to make my relatives miserable.
This week we had a great CSA pick up – an “item” of cucumbers was 5 pounds! – but I did a poor job of following last week’s plan, partially because it was too hot to cook. So now we have a lot of leftovers, plus what we’ve now added. Hopefully we’ll do better this week. Also, I’m apparently very into Smitten Kitchen recipes this week.
The Pick Up
radishes, collard greens, lettuce mix, green onions, garlic, cucumbers, beets, tomato, eggplant, basil, zucchini
The Plan
arugula, cheddar, mozzarella and green onion omelets
with French fries
Kale Salad with Cajun Spiced Chickpeas and Buttermilk Dressing (Budget Bytes)
black bean, kale and rice burritos
Sundried Tomato Pesto Grilled Cheese Sandwiches (Closet Cooking), likely with the addition of arugula
with sauteed collard greens
cold cut sandwiches (because they’re so easy for company!)
veggie sticks/slices and homemade hummus
Baked Orzo with Eggplant and Mozzarella (Smitten Kitchen)
with salads (lettuce, radishes, cucumbers, tomato)
Speedy Veggie Noodle Bowl with Homemade Teriyaki Sauce (Oh She Glows)
Other projects:
Easiest Fridge Dill Pickles (Smitten Kitchen)
kohlrabi and cabbage Slaw (recipe in development)
Blackberry Cheesecake Galette (Smitten Kitchen) – I plan to use raspberries or blueberries
S’mores Waffles (King Arthur Flour)
