Ready or not, school season is back in session for pretty much everyone I know. Though my cooking adventures were initially fueled by a desire to bring better lunches to work, my focus has since transitioned to making awesome dinners. Lunch sometimes falls by the wayside, which is always a disappointment in the middle the day. For the past couple of years, I’ve tried to end my summer by brainstorming a list of recipes that make a good amount of food (to last more than one day) and reheat well. Hope you find this year’s list useful; I know I’ll be coming back to it in a few weeks when I’m feeling stuck.
Single Serving Spinach Calzones
Homemade Vegetarian Enchiladas
Farmers Market Cold Noodle Salad
Super Simple Lentil Sloppy Joes
Eggplant Parmesan
