Brian and I always celebrate Christmas with just the two of us before we spend the holiday with family. This year, we celebrated on Christmas Eve. We started the day with the standard opening of presents and a reading of Luke 2. Most of the rest of the day was spent relaxing, exploring our gifts from each other and my in-laws and watching TV and movies together. It really was a lovely day. And this evening, I made a special dinner, as per usual. As I put it together, I was pleasantly surprised to discover that every part of it utilized local ingredients. It turned out really well too, which didn’t hurt.
The Menu
Roasted beets, from Mighty Food Farm CSA
Roasted Brussels Sprouts, from Mighty Food Farm CSA
Mashed Potatoes, from Mighty Food Farm CSA
Honey-Thyme Roasted Pork Loin, purchased from East Mountain Farm
Snowed In spiced red wine, purchased from Graham Farmhouse
Having just enjoyed such a lovely meal with my awesome husband, I’m extra grateful that I live in a place where local produce and products are available year round. This year’s holiday markets (where I purchased the pork and wine) were great. Though many of the meal’s ingredients weren’t that different from what I usually make, the pork was surprisingly simple and turned out moist and delicious. I would definitely revisit that recipe. Here’s to more local eating in 2015!
