Sometimes a CSA pick up is just like the grocery shopping joke: “I just spent $100 at the supermarket and I didn’t get anything to eat!” Though I definitely ordered food to eat from this week’s pick up, the items I chose were much more snack and side dish focused than things I’d use as a main dish.
It’s all good though – as you’ll notice in my plan below, I kept things pretty simple for the week. This time of year, I’m happy to take advantage of offerings with short availability (snap peas, cherries, green beans). There’s plenty of time remaining this summer for zucchini, eggplant and cabbage.
The Plan

The Plan
pancakes with blueberries
boxed macaroni and cheese with carrot and cucumber sticks
Easy Chicken Quesadillas (Wholefully) with green salad
Garlicky Dal (from the Dinner for Everyone cookbook) with pita bread and sliced vegetables (cucumbers, carrots, Haukrei turnips, snap peas)
tacos filled with Slow Cooker Black Bean Ragout (from The Smitten Kitchen Cookbook), tomatoes and lettuce
pizza – pepperoni with tomato sauce and mozzarella, pesto with mozzarella
snack plate/leftovers
