Finally, it’s CSA pick up time again. This spring wasn’t as difficult as I sometimes find the “off-season”, but I’m still excited to be back in the swing of picking up produce and planning my menu around it. And, of course, eating more vegetables by necessity!
The plan this week is pretty basic, a function of a busy schedule, a fairly basic pick up and a desire to just let the vegetables be themselves.
The Pick Ups
baked salmon with rice and salad (lettuce, radishes, turnips + cucumber and carrots we already had)
Spiced Chickpea Stew With Coconut and Turmeric (Alison Roman for the NY Times)
salad with lettuce, radishes, turnips + cucumber, as well as ham and hard-boiled eggs
shredded chicken tacos with kale chips
