As I mentioned yesterday, I’m thrilled that we’re back to our weekly routine of picking up vegetables at Mighty Food Farm. I’ve been at such a loss as to what to cook for the past few weeks. The photo above makes me so, so happy. It was a pretty darn beautiful day yesterday when we went to pick up our share. After our time deciding what we wanted, we wandered to the strawberry field to pick 2 pints of fresh, red berries. The greenhouses along the way were open and it was exciting to see what’s coming up in the next few months!
And, now maybe I can plan a menu I’ll look forward to cooking! I’ve been so uninterested in food shopping and cooking lately because the food options have been so depressing. Here’s what I’m thinking about for this week:
The Plan:
Salad (lettuce, turnips, radishes, etc.), topped with baked salmon | Portabella mushroom burgers + kale chips | Sautéed onion, Swiss Chard and white beans | Chickpea “crab cakes” (from The Meat Lover’s Meatless Cookbook) | Pizza topped with cheese, tomato sauce and arugula | Loaded salad – vegetables and beans | Baked Risotto with Sausage and Kale from Healthy Delicious |
Also on the agenda for the week: radish and turnip green pesto to freeze and strawberry ice cream.
