Back in the Swing (CSA Menu Plan #111)

It’s the first full week back at work and — despite knowing it’s only Monday — I’m feeling pretty good. I’m much less tired than I was last week and I’m excited for what the semester has in store. We had a quiet weekend and the week ahead is pretty uneventful as well. Here’s to routine!

This week’s pick up doesn’t look like much because I doubled up on several items – potatoes, broccoli, carrots, and tomatoes. I’m determined to eat as many tomatoes as possible before the season ends.

The Pick Up

Easy Rosemary Garlic White Bean Soup (Budget Bytes) with carrot and pepper sticks (from last week) and grapes

Blackened Broccoli Pasta with Charred Lemon and Goat Cheese (How Sweet Eats)

Thai Noodle Bowls with [Peanut Butter] Tofu (Minimalist Baker) using chard, carrots and bell peppers

snack plate – carrot and pepper sticks, tomato slices, cheese, crackers

black bean tacos with cabbage and tomatoes

tomato sandwiches with roasted broccoli

lunch: Baked Orzo with Eggplant and Mozzarella (Smitten Kitchen), yogurt, apples
