What a weekend! I had a great time relaxing on Saturday (and finally getting some work done on personal projects), going to Sunday School and then hanging out at Ramblefest for the better part of Sunday and doing some hiking and cooking today. We’re almost at peak foliage and I couldn’t help but take a few photos:
Brian and I both have a lot going on this week, but for some reason I’ve created a pretty full menu plan. Some of these recipes take a while to make, but they’re largely hands off, so I’ll be able to do other things while food cooks. I think I’ll get leftovers out of some of the dishes, so I may do some mid-week rearranging. In addition, I’m trying to rediscover my cookbooks. My collection has really grown over the past few years and I’ve got some great ones that really deserve more attention. As a result, more recipes from cookbooks may be appearing in my menu plans for a while. Enjoy! (And list your favorite cookbooks in the comments!)
The Pick Up:
spaghetti squash, cauliflower, kale, kabocha squash, peppers, beet, potatoes, delicata squash, tomatoes, eggplant, carrots
The Plan:
Take out Chinese food : ) | Big Cinnamon-Oat Pancakes with Berries (The Whole Grain Promise) + bacon | Kabocha Squash Soup + roasted potatoes | Ratatouille(eggplant, tomatoes, onions, peppers) over rice | spaghetti squash and black bean tacos with queso fresco (The Smitten Kitchen Cookbook) | Whole Roasted Cauliflower (Jamie Oliver) + roasted beets | Roasted Beans, Greens and Squash Rings (The Meat Lover’s Meatless Cookbook) |
Lunch: spicy delicata squash and rice (or whatever other leftovers I happen to have)
