Hello world! They say that you shouldn’t apologize for not posting, but I really am sorry. I had no intention of taking a 2 week break from blogging. The past few weeks have been pretty busy – I visited my sister and her family, wrote a literature review for my masters thesis, and attended a bunch of work meetings and other obligations. It was a good couple weeks, but I couldn’t seem to squeeze in writing. Hopefully, that’s going to change. As a result of the chaos, this is not the most balanced menu plan you’ve ever seen. But it’s real!
The pickup on March 13 was the last pick up for the CSA season; no more Mighty Food Farm veggies until June. It’s definitely not my favorite time of year. I know we’ll eat less vegetables over the next 10 weeks than we usually do. But it’ll work out, it always does.
The Final Pick Up:
potatoes, kohlrabi, apples, turnips, carrots
The Plan:
Sunday | Monday | Tuesday | Wednesday | Thursday | Friday | Saturday |
leftover chickpea pot pie | Nordstrom’s Tomato Basil Soup (one of my favorites!) | Corned Beef Shepherd’s Pie | leftover shepherd’s pie | Work outing + scrambled eggs |
take out buffalo wings + salad | out of town |
out of town | Cheese pizza + salad |
Salmon en Papillote with pasta |
eggs + potato hash + salad | frozen vegetable stir fry + rice | black bean tacos | church dinner |
I’m not planning to continue posting menu plans until the CSA season resumes in June. I’m looking forward to sharing all the fresh recipes I’m making when that time comes!
