Every week, I write about how much I love my CSA pick ups and every week I post a menu plan based around the items I get from Mighty Food Farm. Some weeks, including this one, I really struggle to write those plans though. I ordered what I knew would only be around for a short period of time (cherries, blueberries) and what sounded delicious, but those items don’t necessarily easily lend themselves to actual meals. I have spent way too much time this week trying to figure out to actually cook.
As I said to my husband as I arranged this week’s share for a photo and noted the lack of easy meals from the collection, “but look at those tomatoes!” I love tomatoes so much and it occurs to me that I don’t actually want to do anything with them. I just want to eat them the way they are – maybe with some mozzarella, basil and oil. Instead of taking the most impressive approach, I’m taking the simplest approach.

grilled cheese sandwiches and salad (primarily made with ingredients from previous weeks)
skillet lasagna (based on this recipe from How Sweet Eats) with cucumber and carrot sticks
tabbouleh and sauteed chicken breast strips
Quarter Pounder Beet Burgers (Post Punk Kitchen) and Crispy Baked Sweet Potato Fries (Wholefully)
breakfast for dinner: quick collards, eggs and potato hash…and something else for my 3-year-old who will eat none of those things
snack plate (nuts, crackers, olives) + caprese salad
