This post is 10 days late. In the past month, I’ve started and finished a graduate level course I had a year to do, experienced the death of my chest freezer, finished up the fourth quarter at school, had the world’s worst cold, attended graduation at my school, helped plan a student awards night, spoke at my church, took my kid to her two-and-a-half year doctor’s appointment, attended several doctor’s appointments of my own, tried to understand the low FODMAP diet recommended to my husband by his doctor, returned more online clothing purchases than I kept, updated my final exams, attended field day at school, spent most of a Saturday sick in bed, and more. I am tired, but mostly I am just super behind on life. I apologize. I think things are calmer in the coming days?
I mostly apologize because now you (and I) have 10 fewer days to complete this month’s challenge. If June’s mission was to make something like focaccia, that wouldn’t be a big deal…but no such luck. This month, I’m stepping up the game with a real challenge.

Relishments Bakes – June

This month, we’re making cheesecake!
I have never in all my years made a cheesecake. I do have 70 recipes for cheesecake saved in Evernote, but I’ve never actually had the confidence, occasion or time to attempt any of those recipes.
If you’re feeling a little concerned about this challenge (I am!), I actually feel like there’s a lot of flexibility possible. Cheesecake-swirled brownies, pancakes, breakfast bars and the like are all fair game.
If you want to do something somewhat more traditional, however, these recipes caught my eye:
- Chocolate Cheesecake from Martha Stewart
- Lemon Blueberry Cheesecake Bars from Sally’s Baking Addiction
- New York Cheesecake from Smitten Kitchen
- Layered Turtle Cheesecake from Taste of Home
- Blackberry and Raspberry Swirl Cheesecake from Driscoll’s
As always, the Pinterest board for this month has lots of ideas too!
