It was so great to have a menu plan last week. I don’t know why I continue to trick myself into thinking that it’s easier not to take the time to plan meals because every evening that I don’t makes me cranky. Menu plans enable me to have meals on tap that I get to look forward to and we eat a lot earlier because I’m not procrastinating on coming up with a last minute plan.
This week’s menu, unintentionally, is very comfort food heavy. It strikes me as a little funny. It’s April, the weather is finally nice and I have lots more time to cook than I usually do. But instead of making springtime recipes that require effort, I’m interested in comforting, familiar, simple meals. I think we can all read between the lines on that one. Also, parenting all day in addition to working to provide my students with remote learning is kind of exhausting.
