Tomorrow’s the deadline to submit entries for the Pinstrosity challenge. Luckily the holiday has afforded me the opportunity to put together one last recipe.

When this pin for Cranberry, Lime and Coconut Loaf from Sweet Peas and Saffron found its way to my pin board, I knew I’d make it sooner or later. It includes many of my favorite things: coconut, carbs, cranberries, zest. How could it be bad?
It took me a bit longer than the 10 minutes referenced in the original post to put together the batter, but it wasn’t much longer (and certainly would’ve helped if my butter had been soft). I substituted sweetened flaked coconut because that’s what I had on hand. The loaf took 65 minutes to bake through, just like Denise suggested.
The loaf finished a beautiful golden brown. It was difficult to wait the 30 minutes before turning the loaf onto a cooling rack. I didn’t wait much longer before cutting into it, so it was a bit crumbly when I cut the first 2 slices. I’m hoping that changes as the bread cools, but even if it doesn’t, the taste is excellent. It’s sweet and tart and the toasted coconut on top adds a little bit of crunch.
I think this would be a great bread to make for a party, any time of day. It’s one of those recipes that’s impressive, but not difficult to put together. There’s no chocolate, but it’s still sweet and would make a great dessert.
In addition, completing this recipe allows me to cross off #66 on my 101 in 1001 list: complete 3 projects posted to Pinterest.
