My suspicions in my last menu plan post were, overall, correct: now that school is over a month underway and I’ve had time to adjust to the school year routine, I’m getting much more organized and figuring out how to allot my time better. Case in point: I’m planning another menu.
One of my goals lately is to try to use items I have on hand, instead of buying a ton of new groceries every week. It’s easier said than done, but my pantry is more than stocked and there are some items I definitely need to work to use. It’s more of a budgetary consideration than anything, but avoiding waste is part of the goal as well.
In addition, we’re hosting a couple of friends for dinner every Friday night from here until some unknown point in the future. Brian and our friends are playing the Star Wars RPG at the local game store on Friday. So, I need to come up with a weekly meal idea that will feed 4, be agreeable to everyone and be on the table within an hour and a half of my walking in the door in the afternoon.
