Last week just flew by! So much so that I feel like I don’t even know what to update you on – seems like I just wrote one of these posts. Things are good though. Last Sunday found us at the wedding of one of Brian’s best friends from college. The New Hampshire venue was beautiful, Baby E behaved really well and they served brunch as the meal. It was a great day and I’m really glad we were able to make it.
A new week means I’m once again dedicating myself to better cooking and better eating. It’s taken me a long time to get back on the healthy(ish) eating train since pregnancy and new motherhood, but I think I’m getting there. Thank goodness for fresh vegetables to inspire me.
cauliflower, peppers, delicata squash, kuri squash, honey nut squash, broccoli, leeks, brussels sprouts
Brussels Sprout and Apple Hash (Herbivoracious) + omelets
Sheet Pan Chicken Tikka (Smitten Kitchen) + roasted delicata
honey nut squash soup (adapted from this recipe) + steamed broccoli
Yotam Ottolenghi’s Cauliflower Cake (The Kitchn) + roasted beets
“Who Needs Meat?” Slow Cooker Chili + cornbread
Kuri Squash and Caramelized Onion Galette (adapted from Smitten Kitchen)
Lunches: leftovers from most of the above meals
