Regaining Routine (CSA Menu Plan #47)

Published on January 3, 2016 By Emily. Updated on January 3, 2016

I like new starts.  I’m definitely one of those people who will wait for a new week, month or year to start something new.  At the moment, 2016 holds so much potential.  I am super excited about my theme word for the year and I’m just about at the place where I’m looking forward to going back to school tomorrow.  Really, it’s just the waking up early part I’m not excited about.

I’m looking to get my eating a little more on track as the new year begins.  I consumed an embarrassing amount of cookies during the month of December and I’d been cooking and eating whatever was easiest.  Starting  2016 off with a CSA pick up was a good way to begin moving in a more positive direction.

The Pick Up

CSA Pick Up 1.1.16

kale, spinach, beet, potatoes, delicata squash, daikon radish, lettuce, butternut squash, sweet potato

The Plan

I’m trying a slightly different format for my meal plan today.  It should be much, much friendly for smaller screens and mobile devices. I’ve also added my main lunch dishes for the week, because if I don’t then we probably won’t have very good lunches.  Please let me know your thoughts on the new additions!

Week 1

sauteed cabbage (from last pick up), carrots, kimchi over soba noodles with soy sauce and sesame oil

Smokin’ Hoppin’ John (The Meat Lovers Meatless Cookbook) with cornbread and sauteed kale

leftover Smokin’ Hoppin’ John with cornbread and kale

spinach and cheese calzones and roasted delicata squash slices

Curried Butternut Squash Soup (Minimalist Baker) and biscuits

leftover Curried Butternut Squash Soup and biscuits

Sweet potato waffles and eggs

Lunch main dish: Salads with chickpeas and hard boiled eggs

Week 2

Black Bean and Quinoa Veggie Burgers (Food 52) and sweet potato fries

Unstuffed delicata squash bake (a recipe currently in development)

Leftover
unstuffed squash bake

New England Clam Chowder (Healthy Delicious) and crackers and spinach salad

Leftover chowder, crackers and salad or frozen vegetables

A variation on this red chickpea curry (Savvy Eat), making use of the daikon radishes

Creamy polenta with white beans and canned tomatoes

Lunch main dish: Tortilla de Espinacas – Spanish Omelet with Spinach (Herbivoracious)

Despite the cool temperatures and wet weather, we Despite the cool temperatures and wet weather, we had another fantastic year at @freshgrassfestival. I can never get over how, in addition to all the incredible music, the event features a great venue (@massmoca), delicious food from mostly local vendors, a great local beer tent and bar stocked with @berkshiremtdist and a kid-friendly atmosphere including a @kidspacemm art tent.
Shout-out to some of my favorite acts of the day @ajleebluesummit, @cj_field with @gregcaproni and @theblacklegacyproject.

Looking forward to next year!

Until next year!

I made my first ever trip to @seconddropfarm in La I made my first ever trip to @seconddropfarm in Lanesborough this morning to pick blueberries with my daughter. We had a lovely time at the farm, and especially enjoyed the short walk to the lush blueberry bushes, and the beautiful flower and lavender fields. We didn't participate in pick-your-own flowers today, but it's definitely on my radar for the future.
We are looking forward to some muffin baking soon! 🫐
