Apparently the first week of school is going to take a bit more out of me than initially expected, despite all my good intentions.
Still, I managed to make a pretty decent dinner this evening. Savvy Eat’s Creamy Indian-Spiced Lentils (which is a slow cooker recipe and perfect for school days), vegan flatbread from No Meat Athlete (a recipe that’s definitely going to become a go-to, after I reduce the salt) and roasted CSA cauliflower.
