The week after returning from Rhode Island, we picked up a double share of CSA items from Mighty Food Farm. These extra items were postponed from the June week when we were in Maine. I knew we wouldn’t make use of 20 items, so I offered half our pick up to my in-laws who gladly accepted.
The Pick Up
Picking up 20 items at once is a lot:

After packing up the items for my in-laws, our share was much more manageable and looked like this:

I’ve been doing well with planning and executing my meals (you have to with this many veggies!) but have struggled with actually posting them. So, here’s this week’s farm pick up:

The Plan
We’re solidly in salad season around here. The head of romaine we received on 7/23 is huge, plus we had another head of lettuce from earlier in the season to use up and bags of lettuce mix. Luckily, three of the four of us enjoy a salad.
pasta with tomato sauce and sausage, with salad
cookbook club night – I made Greek Chicken Orzo Salad and Blueberry Basque Cheesecake (more about cookbook club at the end of the summer)
hamburgers with roast potatoes and veggie sticks (cucumbers, carrots, radishes, beets)
snack plate with lots of veggies, cheese, crackers, leftover grilled chicken, olives and pickles
salads (romaine, lettuce mix, beets, tomatoes, carrots, cucumbers) with chickpeas and feta
zucchini pancakes (How to Cook Everything Vegetarian) with pasta and kielbasa
chicken burrito bowls (cubed chicken, lettuce, tomatoes, cheese and hot sauce over rice)
BLT sandwiches with veggie sticks
takeout from Jack’s Hot Dogs (at my daughter’s request) with homemade salads
Family Friendly Baked Eggplant with pasta and salad
