Next spring, I want to remember that June is completely insane. All my fantasies about routine and productivity were completely thrown out the window by the reality that is the sixth month of the year. Not only is it the end of school (which means graduation, awards events, retirement parties and end of the year celebrations), but the calendar has no less than 3 family birthday, my wedding anniversary and the overlap of the school routine with the summer routine. I’m sure June has been this nuts for years, but I felt it keenly this time around. But it’s all good, we’ve just about made it to the end.
And it’ll be a good end – unlike last week, we’ll actually be home to eat meals. July is looking lovely and includes a nice vacation. My daughter is just starting to become mobile which means I’ll never be bored. And the CSA vegetables have been fantastic.
The Pick Up
collards, Swiss chard, strawberries, kohlrabi, kale, Hakurei turnips, scallions, radishes, bok choy, lettuce, summer squash, cucumber
The Plan
Cajun-spiced swordfish with roasted potatoes and collard greens (from last week)
Church cookout
Spaghetti with Sautéed Zucchini and Squash with Thyme and Feta (The Kitchn)
Bratwurst and collard greens over creamy polenta
Swiss chard and cheddar frittata with kohlrabi (fries? slaw? we’ll see!)
Soba Noodle Salad With Spring Vegetables (Food Republic)
Cheese pizza with green salad
Lunches: green salad; tuna salad mixed with shredded kale and scallions (so good! try it!), whatever else we can dig up! It’s so nice to be out of school!
