Once again, I’m home because of a snow day. The good news is, it has been really productive day and I got this menu figured out and posted! The menu includes a lot of dishes that are going to (hopefully) last us two nights – I’m definitely still in a comfort food/casserole mode.
But spring is coming!
Top 10 reasons I’m looking forward to spring:
- No longer wearing boots to school and carrying my shoes
- Leaving the house without a jacket
- Flowers
- Sunsets after 5 pm
- Playground trips with my daughter
- Making plans without a backup plan for snow
- Spring break visits with extended family
- Outdoor running
- Walking on the rail trail with the stroller
- The return of my CSA share
That’s right, friends, this pile of food was our last pick up until the regular season resumes in June. Even though we’ve had this routine for years, I always feel a little lost in the couple of months when we don’t pick up produce. MORE
