Kicking Off The Year: January 3-16 Menu Plan

Published on January 4, 2014 By Emily. Updated on January 4, 2014

Very soon, I’ll be back to the routine.  School’s been out since December 20th for break plus a couple bonus snow days and though the vacation was awesome – visiting Brian’s family, celebrating Christmas, and saving a few days for ourselves to relax before going back to work – but I am ready for the usual schedule.  Hanging out in yoga pants reading blogs for the majority of my day is getting way too normal.  This morning Brian and I headed to our CSA for the bi-weekly pickup.  It was a little bit of an adventure as the back roads are still pretty snowy and icy but thankfully we made it without incident.  This is probably because I wasn’t the one driving; few things make me more nervous than driving in snow.  Now our produce supply is restocked and I’m looking forward to getting back on the cooking train.

As you may have noticed, I did some sprucing up around here over my vacation.  Continuing in that vein, I’m trying out a new format for the menu plans.  As always, please let me what you think and if there are any problems!menu plan 1.3.14

Sunday

Monday

Tuesday

Wednesday

Thursday

Friday

Saturday

          3

leftover Manhattan Clam Chowder

4
baked salmon, roasted sweet potatoes and sautéed Swiss chard
5
Giada de Laurentiis’ Butternut Squash Lasagna with a
side salad
6

leftover lasagna
with salad

7
some sort of enchiladas, possibly with sweet potatoes, beans, rice and/
or spinach
8

leftover enchiladas

9

vegetable soup

10

Greek pizza

11

leftover pizza (if there is any leftover pizza)

12
Brian cooks! – under a new, flexible arrangement, he’ll be cooking on Sunday nights.
13

Buffalo Chili with Blue Cheese Biscuits

14

leftover chili (hopefully there are leftovers!)

15

eggs and potatoes, maybe frittata, maybe something else

16

roasted vegetables over rice with an Asian-style sauce

In terms of lunches, I’m always a little unsure of what the plan is because Brian makes the lunches and I make the dinners.  Granted, I generally try to cook something over the weekend that can be doled out during the week and I do the grocery shopping, but Brian is much more creative than I am about putting together meals to be eaten at work.   This week looks like it’ll be yogurts, carrot sticks and hummus, crackers and the like.  Next week I’m planning to make vegetable tetrazzini which Brian has been requesting for weeks and I keep putting off because I’ve been making so many other rich, carb-loaded meals for dinner.  I’m also on a mission to come up with some new breakfast ideas.  I’m generally not in the mood for cooking (or anything else) first thing in the morning, but I end up starving at work. Cheese sandwiches generally keep me pretty happy, but they’re getting a little old.  Suggestions?

Thanks Casey! I really like the way it looks too. I also really appreciate your feedback…sometimes blogging is like shouting into space and unless someone tells me, I have no idea how my posts are being received. So glad you took the time to comment.

It’s hard to believe that 2022 is basically behind us. Though overall this year found me getting back to the person I want to be (post-babies and “post”-pandemic), I did not try nearly as many new recipes this year as I used to. In fact, I was pleasantly surprised to see that I’d made note of any new-to-me recipes I wanted to share in this post. This year’s list is short, but delicious. It includes recipes from @budgetbytes, @smittenkitchen and @howsweeteats.

@coastalmainebotanicalgardens continues to be one @coastalmainebotanicalgardens continues to be one of the highlights of all my return trips to Boothbay and their annual Gardens Aglow event continues to impress. It was great to be back to walking the gardens instead of the pandemic drive through and there seemed to be more lights than ever. I'm already looking forward to next year.

Fall in the Berkshires is always incredible, but t Fall in the Berkshires is always incredible, but this year we've had weather that has also been outstanding. The past 2 weekends have included time at Jaeschke Orchards, the Greylock Glen, and the Ashuwillticook Rail Trail as well as stopping to photograph any random foliage I see.
Check out the last slide for video of some feathered friends we saw on a walk.

@freshgrassfestival continues to be one of my favo @freshgrassfestival continues to be one of my favorite events each year, and it doesn't hurt that it's just minutes away from home. Enjoying the festival with my kids is definitely a different experience than without, but it's still a good time. The weather was especially cooperative today which was great for all the laps I did around the @massmoca campus pushing a stroller. I'm already looking forward to next year.
