Meal Plan Thursday (CSA Menu Plan #108)

Alternate title: “When in Doubt, Get Tomatoes”

As you may have noticed, I have not been very successful at posting menu plans this summer. I’ve been great at picking up CSA vegetables. I’ve been excellent at taking weekly photos of our share (let me know if you want to see them!). Most weeks, I’ve planned a few dishes. And then, I’ve chosen to do other things with my time, because I can finish the menu plan and write the post later…then suddenly it’s Thursday or Friday and I figure I’ll just try again next week, at which point I repeat the cycle.

It’s a good problem to have. This summer has been really good. Though I haven’t ever gotten into a daily routine, I’ve been having a great time with my family, getting some stuff done and feeling generally good about how I’ve spent my vacation. I can’t complain. We’ve even done a pretty good job of using up all the vegetables each week without a menu plan.

The Pick Up

black bean tacos

Unstuffed Bell Peppers (Budget Bytes) with caprese salad

Leftover Unstuffed Bell Peppers with green beans

Alison Roman’s Spiced Chickpea Stew With Coconut and Turmeric (NY Times) + Quick Collards

Fake Shack Burgers (Smitten Kitchen) with kale chips and Spicy Mustard Vinaigrette Potato Salad

Chickpea Feta Tabbouleh (Oh My Veggies) with side vegetable to be determined

Also on the agenda:

Lavender-Earl Grey Flourless Chocolate Cake, for August’s Relishments Bakes

Lots of sliced tomatoes, cucumbers and/or melon for snacks

Apparently, in the weirdness that is 2020, posting Apparently, in the weirdness that is 2020, posting to my Instagram feed was one of the things that didn't make the cut. There are more items than I'd prefer in that category, but recently I've felt like I'm beginning to get my feet firmly planted beneath me again. This fall was so busy with learning how to teach remotely and parent 2 children well. I don't anticipate that life will ever feel not busy, but I've been able to carve out some time lately for activities I've been missing. Making bread is one of those activities. Hopefully, more posts in the feed will be more frequent going forward.

This weekend's weather was amazing and my family e This weekend's weather was amazing and my family embarked on the only way to kick off fall: we went apple picking at Jaeschke Orchards in Adams.  The parking lot was full, but out in the orchard we hardly came across any other groups.  The trees were heavy with apples and we quickly filled our bag. Looking forward to apples for snacks, pie, crisp and turnovers in the coming weeks.
