Thoughts on Last Week’s Menu:
First of all, my apologies for the delay in getting this post up. I felt like I couldn’t get on top of my to do list no matter what I tried. Some weekends are just like that! Looking at last week’s menu sort of makes me laugh; I barely planned anything and one of the few things I did plan I didn’t actually make. Brian did make a huge batch of the tortellini soup which was wonderful and lasted us for several meals. Last week was a full, but good, week and hopefully this week will find me even more on track because I have some awesome things on the menu.

Saturday – Pumpkin Spice Waffles with Butternut Bacon Syrup from How Sweet Eats
Sunday – Spicy Squash Nuggets with Honey Lime Dipping Sauce and Brussels sprouts
Monday – Lasagna Stuffed Spaghetti Squash, without meat
Tuesday – assorted roasted vegetables with rice
Wednesday – finally trying out this recipe for Curried Vegetable and Chickpea Stew, which I keep putting off and moving to the next week
Thursday – leftover stew
Friday – Hm…any suggestions?
