Thoughts on Last Week’s Menu:
The late summer (though now “early fall”) casserole came out really well. I always worry when I try creating my own recipes, I’m still not comfortable doing so. But this turned out awesome so I’ll be sharing the recipe later this week, if all goes according to plan. We ate it for dinner on Sunday and then enjoyed it for two days of lunches at work. I’m also really glad I made the buffalo tempeh salad again, as it’s just awesome. And apparently my sister tried it out and liked it as well, which both surprises me and makes me really happy.
As part of our venture to the farm to pick up our CSA share on Friday, we also stopped at the Apple Barn and a local pumpkin vendor. We picked up a gallon of cider, some cider donuts and a pumpkin for our stoop. I love having a home we can actually decorate. It was getting pretty late by the time we made those stops and did some grocery shopping, so we opted for scrambled eggs, salad and toast for dinner.
This may be the first week where I actually have food available for lunch throughout the week. Lately we’ve just been having any leftovers there happen to be and then defaulting to yogurt, which is not my favorite lunch.
Dinners:
Saturday – dinner with friends!
Sunday – stromboli with arugula, mozzarella cheese, olives, tomato sauce and fresh tomatoes
Monday – revisiting this spaghetti squash and quinoa bake which was successful a year or so ago
Tuesday – tofu and veggie stir fry with rice
Wednesday – trying a new recipe: Smoky Tomato Lentil Soup With Spinach & Olives
Thursday – leftover Smoky Tomato Lentil Soup With Spinach & Olives
Friday – Cauliflower Steaks with Ginger, Turmeric, and Cumin, maybe?
Lunches:
