Oof, I haven’t posted a menu plan since November 3rd. My apologies. Nothing like the holiday season and the end of the semester to disrupt one’s well-laid plans. The snowstorm this weekend couldn’t have come at a better time. I didn’t have anywhere I needed to go and so it was the perfect time to be snowed in and catch up on some things I’ve been slacking on—like blogging.
Friday 12/6 – Creamy Rutabaga and Potato Soup, with greens on the side
Saturday – Leftover soup and roasted squash on the side
Sunday – Oh She Glows Pasta with Smoky Butternut Squash Sauce with Pasta and Greens (Kale)
Monday – leftover Pasta with Smoky Butternut Squash Sauce with Pasta and Greens
Tuesday – Chickpea cakes from The Meat Lover’s Meatless Cookbook served over spinach
Wednesday – Leftover chickpea cakes with sweet potato fries and roasted butternut squash
Thursday – End of the semester potluck, to which I brought Mark Bittman’s Brownies, which I made with gluten-free flour, and Smitten Kitchen’s Cheesecake-Swirled Brownies, my “signature dish”
Friday 12/19 – CDNYEatDrinkBlog cookie swap and potluck. I brought this spaghetti squash and quinoa bake and 3 dozen ginger snaps.
Saturday – Creamy polenta topped with sautéed shrimp, bacon and Swiss chard.
Sunday – Roasted Vegetable Soup with Herb Dumplings
Monday – leftover soup
Tuesday – some sort of baked eggs, based on these tips from Food52 – which reminds me, I need to buy eggs, as I dropped our carton on the floor yesterday and broke 3 of the 4 eggs we had. Not my best moment.
Wednesday – pizza, toppings to be determined (any suggestions?)
Thursday – leftover pizza
Friday – to be determined, probably something light as it’s the last Friday before break and I’ll likely be enjoying snacks all day long
I’m not sure what my meal plan will look like after 12/20. I want to make an awesome Christmas dinner for Brian and I, but I haven’t made the time to plan it yet. I’m also hoping to put a twist on his family’s traditional breakfast, but we’ll see if I get that organized. We also have some travel taking place over our break and I’m keeping myself open to the fact that parties, get togethers and other last minute outings could arise at any moment.
