Midyear Check In (CSA Menu Plan #143)

Published on July 5, 2022 By Emily. Updated on July 5, 2022

One might think, given that this is my first post since February, that my 2022 resolution to “resume” the activities I used to enjoy (pre-pandemic, pre-birth of my second child) is not going well. Actually, I’m overall quite happy with how things have gone over the last 6 months. I’ve made some bread. I’ve started reading again. Menu planning is much more regular, even though I have clearly struggled to get anything posted.

We’re two pick ups into the main CSA season, following our annual March to mid-June break between CSA seasons. We’re getting our produce from Mighty Food Farm again (for the 12th year in a row!), at a weekly pick up in Williamstown.

Week 1 Pick Up

cucumbers, summer squash, Harekai turnips, strawberries, radishes, scallions, lettuce

Week 2 Pick Up

lettuce, Hareki turnips, swiss chard, radishes, snap peas, kale, cucumbers, spinach, garlic scapes

The past 2 weeks have been a little strange in terms of menu planning and meal eating. The first week of CSA pick up was also the last week of the school year, which always lends itself to chaos. Last week I was in Beverly, Massachusetts for a combination professional development/time with my sister/solo vacation. So, instead of a full 2 weeks of plans, here’s some highlights:

The Plan

pancakes topped with strawberries and bacon

slow cooker balsamic chicken (Naptime Kitchen) with pasta

hot dogs and Beyond Burgers with potatoes

tacos (at least once a week)

Pizza Friday, with snap peas on the side

tortellini soup

slow cooker pork tenderloin sandwiches

chef’s salad

dinner with friends, x2 – both of which we brought big salads to

summer squash with Italian seasoning and mozzarella cheese, with pasta

It may be obvious from the list about that not all the vegetables we picked up have been used. My plan in the coming days, before we get overrun with the next pick up, is to get some items into the freezer. I’ll make garlic scape compound butter. The kale and spinach will get chopped and frozen for recipes later in the summer or fall, or I may make kale pesto. Generally, when I’m home consistently I’m good at making use of most of the shares but that has just not been the case over the past couple weeks.

As always, I very much appreciate you sticking around in this space despite my very sporadic posting. If you need more Relishments content, Instagram continues to be where I’m most active these days.

Until next year!

I made my first ever trip to @seconddropfarm in La I made my first ever trip to @seconddropfarm in Lanesborough this morning to pick blueberries with my daughter. We had a lovely time at the farm, and especially enjoyed the short walk to the lush blueberry bushes, and the beautiful flower and lavender fields. We didn't participate in pick-your-own flowers today, but it's definitely on my radar for the future.
We are looking forward to some muffin baking soon! 🫐
