In the last couple years, I have become a big fan of my slow cooker. It’s not fancy, just a basic round 6-quart manual Crock-Pot that we registered for when we got married 12 years ago. For most of its existence, it just sat in the bottom of my pantry. I didn’t grow up eating many slow cooker meals and I struggled to find recipes that fit the bill of what I wanted: easy prep, long cooking times, leftovers, and appeal for everyone in my family. But as life has gotten busier in recent years, I’ve embraced using my slow cooker on a regular basis to ease the evening meal prep time. My slow cooker has become one of my favorite cooking tools.
I have made all of these recipes multiple times. There are no photos because, for me, the point of using a slow cooker is to put as little effort as possible in at dinner time. All of these recipes can be put in the slow cooker before work and cook all day. It is so satisfying to come home from a busy day and have dinner already made and ready to serve.

This is not a typical dinner recipe – though I won’t stop you from having granola for dinner! However, I was so impressed with this recipe that makes crunchy, delicious granola in a slow cooker that I had to share.
