Crispy Rosemary & Parmesan Quinoa Patties from Seriously Delish
I received Jessica’s book for Christmas this year and I’m still pretty obsessed. This cookbook has seen more use in the past 6 weeks than any other I own. Everything’s turned out great, but the best thing I’ve made so far was the Crispy Rosemary and Parmesan Quinoa Patties on page 203. These were so good and so easy. I saved myself a bit of time and made the quinoa the night before. All I had to do the day I wanted to make this recipe was mix the quinoa, eggs, shallot, garlic, parmesan, rosemary (I used dried), salt, pepper, flour and bread crumbs. I’ve had a lot of bad experiences with various patties that crumble as soon as they hit the pan or when I try to flip them. These quinoa patties stay together and cook up nice and crispy in just a few minutes. I love a recipe that’s both easy and super yummy. This hit all the right notes.

General Tso’s Tofu from Domestic SuperHero
I’ve made a lot of Asian-inspired dishes over the past several years and lately I’ve been getting increasingly comfortable with pan frying tofu. This recipe makes excellent use of both those skills. I loved this General Tso’s Tofu; its basically a pantry meal (I had to get tofu and green onions), which makes it really easy to pull together on short notice and inexpensive. The sauce is especially delicious. I’ll definitely be making this recipe again soon.

We’ve been eating a lot of quinoa lately, but haven’t made it in “patty” form – looks good.
I don’t eat a lot of quinoa in general…I’m just not a big fan, but I love those patties. If you try them, please let me know how they turn out!
