Suddenly I’m remembering why I don’t post everything I eat, or even every day. I’m boring!
I’m still going strong on the vegan challenge; its almost hard to believe that its more than half over. If you missed the recap of the first couple days, check it out. I haven’t posted since because I really don’t have much to report. Breakfast continues to be oatmeal with walnuts and dried cranberries. Yesterday’s lunch was more rice and beans.
Last night for dinner I made a variation on this Tuscan White Bean Pizza I saw on No Meat Athlete. I’ve made it once before, but this time I used leftover juice from canned tomatoes instead of the vegetable broth and dumped a whole bunch of dried herbs (Italian seasoning, oregano, basil) into the bean mixture. And I used my pizza crust recipe, instead of the one listed, subbing agave for the honey. It was quite tasty.
We served the pizza up alongside some roasted squash and ate the leftovers for lunch today. Also consumed: carrot and celery sticks, a granola bar, almonds, chips and guacamole, spiced apple rings I canned last fall and toast topped with peach butter I canned last summer (that’s 2 days of snacks, folks).
I think a big part of what’s made this challenge easier for me is that I’ve been really busy this week. If I had free time to sit around, I’d definitely be thinking about food I’m not supposed to be eating. But I’ve barely had time to eat the meals I’ve planned, so cravings haven’t really been an issue. I’ll save the rest of my thoughts for Monday.
