Preparing for the Week Ahead (CSA Menu Plan #64)

Published on September 10, 2016 By Emily. Updated on September 10, 2016

I’ve been bracing myself for the upcoming week for some time now.  In addition to being my first full week of work since June, I have at least one meeting or appointment or obligation after work every single day of the week.  I know some people’s lives always look like that, but I am not a fan.  I’m already tired and I suspect I’ll be a bit fried next weekend (which is also going to be busy).  However, the light at the end of the tunnel is a very normal, unscheduled week following, so I’m pretty sure I’ll make it.

In light of the craziness about to happen, I’m not planning any impressive dishes for the coming week.  I need meals that take minutes to make, not hours.

The Pick Up

CSA Pick Up 9.9.16

The Plan

dinner at friends

End of Day September Ratatouille (Amy Cotler) – using last week’s pattypan squash over egg noodles

spaghetti with collard greens (from last week) and tomato sauce with salad

red kuri soup with corn on the cob

broccoli and cabbage stir fry over soba noodles

omelets with simple potato hash

swiss chard and black bean tacos with corn on the cob and sautéed beets

lunches: Butternut Squash Baked Risotto (Serious Eats) – using last week’s kale
