I’ve been bracing myself for the upcoming week for some time now. In addition to being my first full week of work since June, I have at least one meeting or appointment or obligation after work every single day of the week. I know some people’s lives always look like that, but I am not a fan. I’m already tired and I suspect I’ll be a bit fried next weekend (which is also going to be busy). However, the light at the end of the tunnel is a very normal, unscheduled week following, so I’m pretty sure I’ll make it.
In light of the craziness about to happen, I’m not planning any impressive dishes for the coming week. I need meals that take minutes to make, not hours.
