June’s Black Lives Matter Relishments Bakes definitely had the potential to be overwhelming. So many great blogs, none of which I’d checked out before. So many delicious looking recipes! So little time. Thankfully, last month was Brian’s birthday, which meant I had some guidance regarding what I should bake as I poured through the recipe indexes on the sites of black food bloggers.
I settled on a Key Lime Cake from Grandbaby Cakes. Brian is a big fan of lime and I liked that a bundt cake would limit any fussing around with layers and the amount of frosting I’d have to make. I don’t have a lot of experience making pound cake, but the ingredients were straightforward. I used regular limes instead of key limes because of availability, and was thrilled to track down a box of cake flour at the supermarket.

I didn’t have any issues with making the batter for this cake. It stuck slightly to the pan upon removal, but I think that was more about removal technique than anything else. I certainly used enough non-stick baking spray.

The glaze was equally simple and I was really pleased with the consistency that resulted. I didn’t make any alterations to the written recipe and I ended up with an icing that was thin enough to pour and drip, but not just run down the sides of the cake.

This cake ended up a bit denser than I anticipated despite the cake flour, but it tastes great so I’m not complaining. We enjoyed cake for a couple nights, then sliced the rest up and froze it. Tonight we ate the first of our frozen slices and the cake and icing both held up perfectly.
