This month, I learned that popovers are ridiculously simple to make and incredibly delicious. I was so pleased with the first recipe I tried that I intended to make several more, but it never quite worked out.

I used the basic recipe from Mark Bittman’s How to Bake Everything (also available here), but added 4 tablespoons of the Everything But the Bagel Seasoning that my local Big Y has finally started carrying. The results were really great and the whole process took less than an hour.

It’s possible my results would have been even better if I hadn’t had a 2-year-old helper both times I made the recipe. The popovers rose really well in the oven but decreased in size almost immediately. I’m not sure if that’s just how it goes, or if more gentle stirring would have made a difference. Still, delicious.

After some hemming and hawing, I did purchase a popover pan, but I think you could achieve decent results with a muffin pan too. Hopefully, future days will allow me the opportunity to try even more flavor combinations.
