As per usual, the vision I had when I posted last month’s Relishments Bakes challenge was not exactly when I ended up making. I found some beautiful, colorful recipes (including this very bright pound cake) but ultimately my desire for something straightforward and simple won the day.
I decided to make King Arthur Baking Company’s Late Summer Berry Torte. I had all the ingredients on hand, which always wins me over to a recipe. If you bake at all, you probably have all the ingredients too. For my version, I used a heaping half cup of frozen blueberries and a heaping half cup of cut frozen strawberries.

Generally, when I say “I’ll make this recipe again”, I mean “this recipe turned out well and therefore maybe someday it will be revisited”. This recipe is probably going to go into the regular rotation. It was done from start to finish in less than an hour (not including cooling). I am often looking for an easy but interesting baked good to bring to a school function or potluck or for after church snacks. I often go with brownies or blondies, but I love the fruit aspect of this cake. It would also be fantastic at a brunch.
The recipe page on King Arthur Baking Company includes a suggestion for making this torte in the winter with cranberries. I love the idea of adding whatever seasonal or frozen fruit is available. I really do think it would be good with anything.
