I actually forgot I needed to write May’s results post before I could post June’s challenge…and now I’m struggling to remember what to say because May seems like forever ago.
I did manage to make a couple new recipes for the challenge last month, despite the chaos of the world.
First, I made this brown sugar cake with maple syrup from the book Cake Magic!: Mix & Match Your Way to 100 Amazing Combinations.

At one point, I was going to frost it but we ended up eating the entire thing before I got around to it. I don’t regret that – this cake was plenty delicious, moist and sweet on its own. My summer plans involve trying even more recipes from this cookbook (I’ve made a couple others before) because every one of them has been great.
The other new recipe I tried in May were Sourdough Key Lime Ricotta Cookies. I made them because I had half of container of ricotta in my refrigerator that I wanted to use for something other than lasagna (which is what I used the first half of the container for). I don’t have sourdough starter, but I used the suggestion in the comments and used an equivalent amount of water and AP flour. It worked perfectly – but if you need to use some starter, do that instead.

These cookies definitely did need the glaze because they were too dry otherwise, but once they were completed they were delicious. Brian loves lime, so I’ll likely revisit this recipe again.
