We’re in the midst of Week 8 of social isolation in our household. It seems appropriate that April’s Relishments Bakes theme was “something old”, because being home all the time is getting really old. We’re fortunate to be healthy, but I am very ready for this to be over.
Nevertheless, I did manage to get some “old” baking in last month.

First, we used up some embarrassingly old cupcake mix that we’d received as a favor at a friend’s wedding. They turned out fine, our three-year-old was thrilled and we didn’t even bother to frost them.

Just as successful were these Double Chocolate Oatmeal Cookies. For whatever reason (and despite the fact that I bulk bought clearance Easter candy), I’ve really been in the mood for cookies lately. This recipe, which I hadn’t made in forever, definitely fit the bill.

I also attempted – not once, but twice – to make oat bread at the request of my husband. I swear that this is the recipe that I used to make all the time, but both times I didn’t get any rise from the final loaves. The first time around, I thought it was because I accidentally turned off the oven mid-way through the bake, but I got the same results the second time too. I’ve used the yeast and flour successfully in other recipes, so that’s not the issue either.
Stay tuned for a new challenge soon!
