Despite the best of intentions, here I am posting 4 weeks of menu plans. One might imagine that my 2022 theme would sustain me through posting more than one menu plan on time, but January had other ideas. In addition to wrapping up and starting a new semester within a one week period, my household spent a couple weeks in January quarantining with covid. The good news is that we all had mild cases, it’s now February, the new semester is going wonderfully and I have a collection of delicious meal ideas for your winter produce.
