Take 2 (CSA Menu Plan #75)

Published on June 6, 2017 By Emily. Updated on June 6, 2017

A week ago, I wrote a post about how ready I was to get back to blogging and how there’d be new content coming your way soon!  I had posts on the docket and time available and I was prepared to get back in the game.

And then I tried posting last week’s menu plan, and Windows Live Writer wouldn’t let me upload a photo.  And then WordPress gave me the same error.  So, I published the post without an image.  A couple days later, still unable to solve the problem, I spent a couple hours in chat with my blog’s host, to no avail.  Sunday night I did the same, with the conclusion that nothing could be done and I should check the WordPress forums.  Awesome.  Posting without pictures isn’t really an option.  I posted to Reddit, seeking assistance.  And today, I finally smartened up and emailed my friend Katy Widrick. In minutes, she’d sent me a link with the solution.  I changed one simple setting in WordPress and suddenly I could add photos to my site again! Thanks Katy/Google!

So, I was all set to blog this evening. But before I could write, it was time to make dinner.  Imagine my delight when I opened up my Homemade Enchilada recipe (link below!) only to find that there was no recipe on the page. Fantastic.  After minutes of stress (and joy that that particular recipe is also in Evernote), a tweet to anyone who would listen, and a draft email to Katy, I noticed that my recipe plugin was deactivated.  Why? I have no idea.  But again, I changed one simple setting and all my recipes reappeared.  Thank goodness!

So, that’s what I’ve been up to lately.  Stay tuned for those posts I promised – maybe they’ll actually go up this week!

The Pick Up

CSA Pick Up 6.2.17

bok choy, green garlic, Hakurei turnips, baby beets, radishes, lettuce, collard greens

The Plan

pinto bean, black bean and collard green enchiladas with roasted beets (from last week) – 2 nights

herbed roasted potatoes with sautéed collard and radish greens

kielbasa and pierogies with salad featuring turnips, baby beets and radishes

breaded cod with green salad

Quickie Faux Phở (Budget Bytes) with bok choy

pizza – toppings to be determined

lunch: chickpea salad with blue corn chips, green salads

PS – My laptop randomly shut down in the middle of writing this post.  Apparently I’m not meant to blog this week. But if you’re reading this, I managed to post!

Apparently, in the weirdness that is 2020, posting Apparently, in the weirdness that is 2020, posting to my Instagram feed was one of the things that didn't make the cut. There are more items than I'd prefer in that category, but recently I've felt like I'm beginning to get my feet firmly planted beneath me again. This fall was so busy with learning how to teach remotely and parent 2 children well. I don't anticipate that life will ever feel not busy, but I've been able to carve out some time lately for activities I've been missing. Making bread is one of those activities. Hopefully, more posts in the feed will be more frequent going forward.

#sponsored All the time we've spent at home lately #sponsored All the time we've spent at home lately has definitely had me looking to expand the snack options in my pantry. I jumped at the chance to try these @sunmaid Sour Raisins and they immediately became one of my daughter's favorite snacks. She likes them because they're reminiscent of candy, I like them because they're technically fruit and they come prepackaged for easy snacking and taking on the go. I was pleasantly surprised at how tasty they are!

This weekend's weather was amazing and my family e This weekend's weather was amazing and my family embarked on the only way to kick off fall: we went apple picking at Jaeschke Orchards in Adams. The parking lot was full, but out in the orchard we hardly came across any other groups. The trees were heavy with apples and we quickly filled our bag. Looking forward to apples for snacks, pie, crisp and turnovers in the coming weeks.
