Sorry Cynthia, but it’s not really pizza. But it is really tasty. Who knew that polenta, beans, cheese, and chilies could taste so good? I had a little bit of trouble getting the polenta to spread out the way I wanted it to, but it worked out alright eventually and it was awesome! Cynthia’s right: this is an perfect go-to meal, even if it doesn’t serve up too pretty.

I used to think that the flavors in Chinese take out weren’t attainable at home, but this recipe proves otherwise. Delicious–and I had all the ingredients in my pantry! Instead of using the 2 tablespoons Jessica recommended, we dumped a whole batch onto a pound of previously frozen veggies. Yum.
