This week has really felt like summer, finally. Following my last 2 weeks of busyness (including being in school until June 23), I’ve been leaning into summer activities. In the last 7 days I’ve been to the lake twice, taken my daughter out for ice cream, gotten a bunch of computer-related tasks done while taking advantage of daycare, enjoyed multiple walks around the neighborhood, done some baking and food prep, had a lunch/meeting with coworkers, and prepared for our upcoming vacation.
The Pick Up

The Plan
hamburgers, hot dogs, potato chips & salad
Asian-inspired rice bowls featuring bok choy, radish, turnip, cucumber and scallion
church picnic (more hot dogs and hamburgers!); we brought a big green salad featuring beets, scallions, radishes, turnips, cucumbers, and supermarket carrots
Green salads with buffalo tempeh and blue cheese dressing (adapted from this Post Punk Kitchen recipe)
Pizza – one half cheese, half pepperoni; one white with garlic, ricotta and spinach
Summer Squash Galette (Smitten Kitchen)
leftovers/fridge cleanout
