If the theme of the last menu plan post was “minimal effort”, this week is the opposite. We picked up a double share of CSA items, rescheduled from the week we were away on vacation. Additionally, my in-laws have arrived in the Berkshires to move into their new home! We’re so excited to have them living locally. The result of this is that we had them over for dinner most days this week, so I actually thought about what we’d eat and made sure there were complete meals on the table.

Sausage Cassoulet (from Dinner for Everyone) with corn on the cob
chef’s salad with hardboiled eggs, beets, carrots, cucumbers and deli ham and cheese
Summer Squash Pizza (Smitten Kitchen), grilled chicken and caprese salad; pasta for the kids
hamburgers, hotdogs, kale chips and fries
Eggplant Parmesan with spaghetti and vegetable sticks
Brian and I will be attending a wedding; the kids and my in-laws will have sandwiches
