Winter Is Coming (CSA Menu Plan #16)

Published on November 11, 2014 By Emily. Updated on November 11, 2014

Signs winter is coming:  the amount of snow the Midwest received this week, the increased frequency with which we are defrosting our car in the morning and the shift from picking up our CSA weekly to biweekly.  The biweekly pick ups cause serious mixed feelings in my life.  On one hand, it’s nice to have back the part of the weekend that is usually spent driving to and from Vermont to get the vegetables.  I’m looking forward to the additional flexibility with my time.  On the other hand, it’s hard to remember how to dole out the share over two weeks instead of one and think that far ahead.  We went down from a medium share (10 items per week) to a small share (5 items per week; 10 per pick up) for the first time this winter.  We found ourselves struggling to use it all up last year.  We’ll see if it turned out to be the right choice.  That said, I’m really excited to have 2 weeks of dinner plans done!

On Last Week:cauliflower mac with beets

Last week was a pretty darn successful week in the Relishments kitchen.  I was really pleased with how the Creamy Cauliflower Mac came out; it was super creamy, despite how little cheese was actually in it.  I doubled the recipe (using a head and a half of cauliflower), which gave us dinner and two days of lunches.  I was also pleasantly surprised with my first attempt at cauliflower pizza crust.

This Week’s Pick Up:

CSA pick up 11.8.14

Brussels sprouts, delicata squash, butternut squash, romanesco cauliflower, fingerling potatoes, cauliflower, kale, spinach

The (2 Week!) Plan:

As we get closer to the holidays, there are plenty of events and excuses that keep us from eating at home.  This past Sunday was a supper at church, next Sunday I’m meeting up with my sister to do some work on her website.  In fact, the delicata squash and about half the Brussels sprouts were cooked up and taken to church.  There are a lot of leftovers happening in the next 2 weeks, which is totally fine with me.  Maybe it’ll even result in some more posts around here!

Sunday Monday Tuesday Wednesday Thursday Friday Saturday

church dinner

leftovers from Sunday

kielbasa and pierogies, with roasted romanesco cauliflower

Curried Cauliflower Soup (Shutterbean)

leftover soup

Butternut Squash Pizza (Real Simple) with Brussels sprouts

black bean + kale enchiladas

Dinner Out

Vegetable Pad Thai (Martha Stewart)

Chickpea Noodle Soup (Originally on Peas and Thank You)

a vegetarian variation on Skillet Lasagna (How Sweet It Is)

leftovers

Broccoli and Potato Nuggets
(Joy the Baker)

Apparently, in the weirdness that is 2020, posting Apparently, in the weirdness that is 2020, posting to my Instagram feed was one of the things that didn't make the cut. There are more items than I'd prefer in that category, but recently I've felt like I'm beginning to get my feet firmly planted beneath me again. This fall was so busy with learning how to teach remotely and parent 2 children well. I don't anticipate that life will ever feel not busy, but I've been able to carve out some time lately for activities I've been missing. Making bread is one of those activities. Hopefully, more posts in the feed will be more frequent going forward.

#sponsored All the time we've spent at home lately #sponsored All the time we've spent at home lately has definitely had me looking to expand the snack options in my pantry. I jumped at the chance to try these @sunmaid Sour Raisins and they immediately became one of my daughter's favorite snacks. She likes them because they're reminiscent of candy, I like them because they're technically fruit and they come prepackaged for easy snacking and taking on the go. I was pleasantly surprised at how tasty they are!

This weekend's weather was amazing and my family e This weekend's weather was amazing and my family embarked on the only way to kick off fall: we went apple picking at Jaeschke Orchards in Adams. The parking lot was full, but out in the orchard we hardly came across any other groups. The trees were heavy with apples and we quickly filled our bag. Looking forward to apples for snacks, pie, crisp and turnovers in the coming weeks.
