Baked Lemon Cod with Garlic and Dill

  • 1 pound skinless cod (haddock, tilapia or other white fish work equally well)
  • 3 tablespoons olive oil, plus more for drizzling
  • 2 tablespoons lemon juice
  • 3 garlic cloves, crushed
  • 1 teaspoon dried dill
  • salt and pepper, to taste


  • Combine the olive oil, lemon juice, crushed garlic and dried dill in the bottom of an 8x8 baking dish and stir to combine.
  • Add the fish, filling the dish as evenly as possible. It's fine for the fish to touch and/or overlap if needed. Drizzle with olive oil and sprinkle with salt and pepper.
  • Bake for 15 - 20 minutes, or until the fish is cooked through.
  • Gently remove from baking dish and serve.
  • Enjoy!
