Pizza is a fairly regular meal in our house, we probably make it a couple times a month. I make whole wheat pizza crust and then we top it with whatever’s around.
Last week I discovered (in my newly organized recipe binders), a pizza recipe that I couldn’t wait to try out. So, I made Rachael Ray’s Artichoke, Tomato and Spinach Pizza. And it was the best pizza I’ve made so far.
I made just a couple alterations to the recipe:
- I used my normal crust recipe and baked it on my pizza stone, instead of using the inverted baking sheet.
- We used marinated artichokes, but on the next go-round we’ll use plain canned artichokes.
- We only cooked the pizza for 10 minutes, but your baking times may vary.
Like I said, this pizza was fabulous. As I added all the toppings, it looked like a mountain, but the spinach cooked down and the taste was amazing. The abundance of toppings meant that instead of consuming a whole pizza in one night, as is usually the case, we got 2 meals (4 servings) out of it. Typically, I’m not very creative with pizza, but this creation has inspired me to try out some more interesting pizza combinations in the future.
What’s your favorite creative pizza topping combination?
That looks like a HEFTY pizza. Very filling. And vegetarian!
I think my favourite pizza has to be the one my BF makes with Morbier cheese. SO GOOD. It’s all it needs. A bit of tomato sauce, mozzarella and morbier.
