Last week, on the way home from work one day, Brian asked me what was for dinner. When I replied that I wasn’t sure, he asked what was on the menu plan. There was no menu plan. It is Monday night, a full week since I picked up our CSA share and I am just now sitting down to think about the plan for the next week. Obviously, we ate but every single night was an off the cuff, last minute decision. In the interim, between that conversation and now, it’s taken me embarrassingly long to write this menu plan. I’m just not feeling it this week.
The good news is that last weekend, I hosted my third annual Soup Swap. This year’s turn out was really low, but I still ended up with 5 containers of soup that I didn’t have to make. During a time when my life seems especially busy and disorganized, I’m all about meal options that someone else came up with.
The Pick Up

Soup night at church (I brought this bread)
Chickpeas, sweet potatoes and kale over rice
Chicken tacos with spinach
spicy chicken salad pita sandwiches (made with leftover taco chicken) with sauteed cabbage
General Tso’s Tofu sandwiches (Domestic Superhero) with cabbage slaw and roasted beets
this Chocolate Mousse Cake with Raspberries from King Arthur Flour (which is AMAZING – stay tuned for the post about it!)

Acorn Squash Stuffed with Bread, Cheese, and Bacon (The Kitchn)
Lentil Sloppy Joes over potatoes
fried eggs and cabbage pierogies
Roasted Carrot Soup (Food52) – 2 nights
Take out Asian food!
