Traditionally, I’m not a big Saint Patrick’s Day person. I never go to parties, I think artificially green food is pretty gross and until a year or two ago, I didn’t like beer. Still, it’s just not Saint Patrick’s Day without corned beef and I always make sure to cook some.
This year as the links to Saint Patrick’s Day recipes came my way I decided to do a bit more than usual. Last week I made Mark Bittman’s Beef Stew with Guinness which was unique because I never make beef stew (or really beef anything) and it was my first time drinking or cooking with Guinness. The stew turned out amazing and was perfect for the cold weather we’re hoping goes away soon.
Yesterday I made Little Bitty Bake’s Irish Soda Bread. I didn’t remember liking Irish soda bread but I figured it deserved another try. I added raisins and a tablespoon of caraway seeds. Not only is the bread quick and easy to make, it tasted awesome. Another loaf may be in my near future, the loaf didn’t last very long.
Dinner last night was Dijon Corned Beef In the Slow Cooker from A Year of Slow Cooking. The recipe has become my go-to for corned beef; this year I used spicy brown mustard instead of Dijon. I served the meat with roasted potatoes and sautéed cabbage seasoned with dill and garlic powder.

Oddly, the thing I look forward to most in a boiled dinner is the thing I hated most as a child — cabbage. I could definitely go for some of that beef stew though. Looks amazing. Unfortunately, the stomach bug has hit our house and I don’t dare cook anything with that strong an aroma. Sounds like good recovery food when everyone is healthy again.
