Thoughts on Last Week’s Menu:
I generally don’t list side dishes on my menus, but you should know that lately they’ve been almost all salads. The salad mix from our CSA has been awesome; full of the spicy lettuces I love. We’ve been adding peppers, tomatoes, baby turnips, carrots and supermarket baby spinach to the salads, then topping them with olive oil/balsamic vinegar and salt.
Sunday – frozen mushroom ravioli and salad
Monday – we’ll be doing some hiking on Monday, so we’ll see what I feel like doing
Tuesday – revisiting tortellini soup with kale
Wednesday – trying out this recipe for Curried Vegetable and Chickpea Stew
Thursday – leftover Curried Vegetable and Chickpea Stew
