Hello February (CSA Menu Plan #22)

Published on February 2, 2015 By Emily. Updated on February 2, 2015

It’s snowing again.  For the second time in 2 weeks, I’m home for a snow day.  And while I’m glad that we’re home safe and don’t have to go out in this grossness, I wouldn’t mind the opportunity to teach a full week of classes.  Silly me.  At the very least, it’s now February, which means we’re getting closer to spring, regardless of what the groundhog may think.

Despite the fact that I knew we’d have no school today (they called it last night) and the fact that my “Super Bowl Party” consisted of eating buffalo bean dip, watching Agent Carter and West Wing, drinking beer, playing King of Tokyo and trying to guess all 27 of the amendments to the constitution, I didn’t manage to get this post up on time.  We’re weirdos, but it was a nice evening that completely distracted me from the things I was supposed to be accomplishing.  Good thing I have all of today to get caught up.

Brian did the farm pick up this week without me.  Based on the Mighty Food Farm email newsletter, I told him to make sure to get apples and frozen strawberries.  I was thrilled when he came home with both of those items.  Fruit in February?  Yes please!  We were also out of onions, so now that issue has been remedied.

The pick up:

CSA pick up 1.30.15

Potatoes, onions, apples, butternut squash, frozen strawberries

That said, we only get 10 items and some weeks they don’t seem to go very far, as you can see above (the bag of potatoes and onions count as multiple items).  Chances are I’ll make some sort of dessert with the strawberries, and maybe the apples as well.  We signed up for a small CSA share for this coming winter again, but it’s weeks like this where we are running out of vegetables before the next pick up that I ponder the wisdom of that decision.  We skipped getting carrots this week because I picked some up at the supermarket late last week because we were totally out.  I also picked up a package of mixed spinach and greens during my grocery shopping yesterday to help get us through.

As far as the grocery shopping and menu planning is concerned, Brian and I are currently endeavoring to get a really strong handle on our finances.  I’m working to balance trying new recipes and making exciting meals while staying in the grocery budget.  There’s a lot of food in our pantry, so I’m working to use what I’ve already got.  Stay tuned for how that all shakes out in terms of planning.  This recipe is especially heavy on things I’ve made before, but this should make for an easy couple of cooking weeks!

The plan:

Sunday

Monday

Tuesday

Wednesday

Thursday

Friday

Saturday

Super Bowl Snacks:
vegetarian buffalo dip (Wannabe Chef)
Polenta with canned tomatoes and beans Gold Rush Soup & Chickpea Croutons (My New Roots) Leftover soup Tofu Parmesan
+ salad
leftover tofu parm + salad Potato Pancakes (from How to Cook Everything Vegetarian) + salad
Fish + lemony risotto + frozen vegetables Soba Noodle Soup (Savvy Eats) Black Bean Tacos more black bean tacos Breakfast for dinner: potato hash  + eggs (clearly, a favorite) CSA pick up!
Menu to be determined by what’s available
Valentines Day!
Possibly chicken piccata + pasta

As always, please let me know if you have questions about anything on the menu or want to know more.  I’d gladly share, if there’s interest.

Apparently, in the weirdness that is 2020, posting Apparently, in the weirdness that is 2020, posting to my Instagram feed was one of the things that didn't make the cut. There are more items than I'd prefer in that category, but recently I've felt like I'm beginning to get my feet firmly planted beneath me again. This fall was so busy with learning how to teach remotely and parent 2 children well. I don't anticipate that life will ever feel not busy, but I've been able to carve out some time lately for activities I've been missing. Making bread is one of those activities. Hopefully, more posts in the feed will be more frequent going forward.

#sponsored All the time we've spent at home lately #sponsored All the time we've spent at home lately has definitely had me looking to expand the snack options in my pantry. I jumped at the chance to try these @sunmaid Sour Raisins and they immediately became one of my daughter's favorite snacks. She likes them because they're reminiscent of candy, I like them because they're technically fruit and they come prepackaged for easy snacking and taking on the go. I was pleasantly surprised at how tasty they are!

This weekend's weather was amazing and my family e This weekend's weather was amazing and my family embarked on the only way to kick off fall: we went apple picking at Jaeschke Orchards in Adams. The parking lot was full, but out in the orchard we hardly came across any other groups. The trees were heavy with apples and we quickly filled our bag. Looking forward to apples for snacks, pie, crisp and turnovers in the coming weeks.
