It’s cold here in the Berkshires, in case you hadn’t heard. So cold that some schools have closed. I think tomorrow’s going to be better, but it’ll still be winter. We put away the Christmas decorations today which means that we’re now in that “always winter, never Christmas” part of the year that always lasts much longer than I’d like it to. And even with the decorations gone, I’m struggling to get back into the menu planning, cooking every night routine.
Speaking of things that are longer than I’d like, this post should’ve gone up on Sunday. But I was knocked out with a recently acquired cold and a lack of inspiration. A lack that has listed through to the present. For some reason, I just couldn’t come up with 14 days of things I wanted to eat. 14 days, including the 3 that we ate lasagna and the leftovers I pulled from the freezer. I don’t know what it is about this week, but the menu planning has been such a struggle. It’s not like there’s a lack of recipes in my life. Nevertheless, I think I’ve finally come up with something workable.
