This was supposed to be the week where I got back on track with regularly scheduled posting. Really, it was! But clearly, that didn’t happen. The bulk of the blame for that reality is the fact that my laptop decided to stop booting correctly on Tuesday. It’s amazing how difficult it is to be productive when one’s computer doesn’t work. Combine that with the end of the school year, finishing my masters thesis, preparing for Brian’s birthday, planning for a visit from family and anticipating the birth of my nephew, and you may understand why blogging just isn’t getting done. Talk to me in a week or so.
Some days, it’s as difficult to make dinner as it has been to get a post written. It’s times like these (and it seems like there has been a lot of these times lately) that I’m grateful for leftovers. I pride myself on cooking dinner from scratch as much as possible, but I also generally plan my menus with at least one night of leftovers. I’ve talked about many of my favorite leftover-creating recipes individually before, but today I’m going to share them all in one post. These recipes are ideal for creating leftovers for my family of 2, your mileage may vary.
